That’s not a connection often made but Jim Koch thinks the beer industry and especially the flourishing niche of craft brewers he inhabits owes its increasingly refined image in part to the growing popularity of ethnic cuisines. “The one common element of all these new cuisines is they are beer cuisines. Wine is very challenged” says Koch founder of The Boston Beer Co. and Samuel Adams beer.
