For exotic meats like kangaroo alligator rabbit and venison thatis. While some are considered de rigueur at the tables of some restaurants – venison is even found at zi char outlets – the others are popping up on menus of some nightspots as bite-sized bar snacks. Forget about nuts and chips – if going exotic is the trend even gourmet club cuisine like mini Wagyu burgers thin-crust pizzas and Blue Swimmer crabcakes may be passe in the future. Currently Angel’s Share at Dempsey Hill features char-grilled kangaroo with a veal jus and Shiraz reduction but very soon it will also start serving rabbit and alligator dishes.
