21 2008| Page 2F Prep time: 25 minutes Cook time: 20 minutes (for chops) Makes 6 cups brine and rub for six chopsThis brine can be used for chops or pork tenderloin. It keeps the meat moist but do not soak it in the brine too long or it will be salty. The rub is optional but it does add a nice finish especially for chops. Note: The prep time does not include the time the meat soaks in the brine. This recipe is based on one from Bon Appétit magazine.

A few notes from Dick Cantwell’s talk:- Even on a Seahawks game day Elysian Fields sells more of the Immortal IPA than any other beer on tap. This is impressive considering they usually have a couple schwag beers on tap for game days and are right next to the stadium. – Dick encourages Elysian brewers to contribute recipes for experimentation. All of the Elysian brewers get together and work on these as a group and make suggestions and improvements. That’s a great way for assistant brewers to learn and contribute. – Elysian Fields has 20 beers on tap Elysian Tangletown has 16 beers on tap and Elysian Capitol Hill has 16 beers on tap.

Never heard of them? k how about James Hetfield Fred Durst Vampiro or Billy Joe Armstrong? I hope so because they are nationally known names who watched the first names listed wrestle for the California based Incredibly Strange Wrestling during the mid-1990′s until early in this decade. Writer Bob Calhoun used to be part of ISW as the aforementioned Count Dante. He recently published a book on his time with ISW called Beer Blood and Cornmeal (ECW Press 366pp $19. 95 US) which is quite possibly the funniest book on wrestling not written by a current WWE superstar.
